Two Thursday Recipes


A nice idea from Randi at I have to say... is to post a favorite recipe today...here are mine. The first one is an icing recipe which you can use on brownies or whatever you want and with outdoor eating just arriving the second recipe is nice on green leaf lettuce salads. Both recipes are from this book I mentioned in a previous blog post. Hope you enjoy them!

Date and Carob Icing

Free of dairy, wheat, yeast, corn, sugar, eggs, soy, nuts, nightshades and gluten

Ingredients:

1/2 cup chopped dates
2 Tbsp. carob powder
2-3 Tbsp. boiling water
3 Tbsp. maple syrup
1 tsp. orange rind
1 Tbsp. orange juice

-Mash dates and pour boiling water over them. Mix in remaining ingredients. Blend until smooth. (I do this in the blender)

Sunflower Dressing

Free of dairy, wheat, yeast, corn, sugar, eggs, soy, nuts and gluten.

Ingredients:

1 cup roasted sunflower seeds
1 clove garlic minced
1/2 red pepper, roasted
1/2 tsp. sea salt
3/4 cup water
Juice of 1/2 lemon

-Roast raw sunflower seeds in cast-iron pan on low to medium heat until nicely browned. Stir frequently so they don't burn.
-Roast red pepper in oven, under broiler, until skins blacken; cool, then peel off skin.
-Blend all ingredients together in food processor, adding water slowly - you don't want it too runny.

This is a great dressing for potatoes or for avocados, or for a dip with raw veggies. ( I also like it on a nice spring salad - tasty!)
